What is gluten?

Gluten is the proteins found in the grains commonly consumed in the western diet: wheat, barley, rye, and arguably, oats. This includes many variations of these grains such as kamut & spelt.

The celiac community has long debated whether oats should be included. Either way, oats are almost always contaminated with wheat (either through harvesting, processing, or otherwise), so best to avoid oats too when going gluten-free.
